Tomato sauce over zoodles

I love my spiralizer. I’ve had it on my wish list for quite some time, and I finally got around to ordering one about a month ago. I had bought spiralized veggies at the grocery store up until then, so to be able to do this all at home is so much more fresh and affordable. Less planning involved – just grab veggies on hand and go. IMG_9858

Most of the time I make veggie stir fries (I tend to eat the same meals often – when you I like something, I really like it) and incorporate zucchini noodles, but today I made a meat sauce over the zoodles. So easy. I tossed the zoodles into the same pan with the sauce I had whipped up and cooked them for a few minutes. I find a shorter cook time of 2-3 minutes at a medium heat helps to keep them in tact and keep a texture more like a regular noodle. So delicious.
